We’re excited to announce yet another amazing #snailofapproval recipient, Casa Carboni

Casa Carboni is the creation of Matteo and Fiona Carboni, who made the Barossa their home in 2012 after years immersed in Europe’s food and wine culture. Their vision is simple: to share the joy of Italian cooking while celebrating the very best seasonal, sustainable produce from the Barossa and South Australian coast.
Raised in Emilia Romagna, Matteo learned to make fresh pasta at his Nonna Pia’s side, where cooking was always about more than food - it was about friendship, family, and community. This spirit lives on at Casa Carboni, where guests not only learn recipes and techniques, but also the cultural stories behind them. Fiona’s deep knowledge of wine and her love of connecting people through food enrich every experience, from the cooking school to the enoteca.
Whether it’s the ingredients for a cooking class or dishes served in the Enoteca, Matteo and Fiona carefully explain where each product comes from, often highlighting the grower or producer behind it. Every detail reflects the #slowfood values - from using local, seasonal produce grown with care, to serving meals on handmade Australian pottery.
Casa Carboni has become a true Barossa hub - a place to savour Italian flavours, enjoy thoughtfully chosen wines, or indulge in delicious house-made Italian sweets.
