Join Gina Dal Santo and Rosa Matto as they explore fresh, local cheeses. Exclusively for Slow Food SA members, Gina and Rosa will demonstrate some surprising culinary uses, storage and properties of the most popular of fresh cheeses.
Each dish will be accompanied by a taste of local wine and Gina’s Limoncello with dessert. Gina Dal Santo is a Churchill Fellow who is a world renowned cheese expert and educator. Rosa Matto’s teaching and catering career spans more than four decades. They are both Slow Food SA committee members.
The menu will include five seasonal dishes, all featuring local, fresh cheeses. Think beyond the obvious and fully understand the traditional, seasonal nature of these simple but versatile cheeses.
